Good ice cream ...
Good ice cream analogy. It fits for both country and rock. What about R & B? Otis Redding, Ray Charles, Aretha Franklin, Sam Cooke and the list goes on... all great back in the day. R & B was as good as it got back in the 60s but look at it now. A lot of people don't like old time country, call it to nasily and winey and depressing. I guess thats a matter of opinion. But I can't see how that was worse than the modern R & B which is a far cry from what it was.

I`m really a rock ...
I`m really a rock fan but both country and more so rock have gone down the toilet

There`s still so good country but nothing sounds as good as what`s come before.

Country and Rock now comes in Chocolate and Vanilla.

Before it had 31 flavors like Baskin Robbins.
